The salt stone is the perfect accessory to add extra dimension to your dishes. A subtle salty flavour is added to your meat, fish or vegetables when you cook them on the salt stone. As there are also many minerals in this stone, it gives a complex flavour. This saltstone measures 30 x 20 cm and does not include a saltstone holder. How does the salt stone work?
It is important that you heat up the salt stone gradually, otherwise there is a chance of it breaking. You start by gently heating the saltstone on indirect heat. To create an indirect zone in your Kamado, you need the multilevel lift. Then you let the salt stone heat up for 15 to 20 minutes. After about half an hour, the stone will be hot enough for your preparations. The optimum temperature for grilling on the salt stone is between 200 °C and 220 °C. You can test whether the stone is hot enough by throwing a drop of water on it. If the drop starts dancing, the salt stone is ready for use. When you fry your ingredients on the salt stone, they lose moisture in which a layer of salt from the stone dissolves and is added to your dish. This creates a very nice subtle salt flavour.
How do you clean the saltstone?
Before you start cleaning the salt stone, let it cool down well. Cooling takes about as long as it took the stone to heat up. When the saltstone has cooled down, you can use a clean scrubbing brush to remove the dirt. When you start using the salt stone again and it is up to temperature, you can wipe the stone clean with your barbecue brush. The stone will still retain a black colour. If you want to get the salt stone nice and clean and pink again, you can briefly hold it under the tap and clean it with a scrubbing brush. It's better not to do this for too long because then the salt dissolves and the salt stone won't last as long.
What can you prepare on the salt stone?
You can do a lot of different things with the salt block. You can cook meat, fish and vegetables. For example, you can prepare delicious cuts of meat such as bavette, diaphragm or skirt steak. You can cut these into thin strips against the grain and grill them rare within seconds. Fish is always a good choice too, salmon, prawns and sea bass are very easy to prepare on the salt stone. Not to mention, vegetables and other vegan products can also get a delicious salty flavour from the salt stone.
