When cooking with indirect heat, place a heat shield between your grill and your burning coals. The heat deflector will keep you from getting direct radiant heat from the coals onto your ingredient. The shield will also prevent oil or grease from flaming. When you cook indirectly you are using your Kamado more as an oven than a grill. However, the BBQ flavor will always be in your preparation because you are cooking in an enclosed BBQ. You can work indirectly at both high (e.g. pizza) and low temperatures (e.g. pulled pork).

A heat shield or heat deflector is a must if you want to get started with heat zones and different types of cooking styles. The YAKINIKU heat shield is placed on top of the coals to shield the direct heat from the coals. By shielding the coals, you also prevent flames caused by grease or oil on the glowing coals.
The heat shield creates a heat zone that has the same effect as an oven and gives you the popular form of cooking: low & slow grilling. The advantage of this is that you grill meat and or fish slowly while it retains its juices. Ideal for products that need a little more precision. At low temperatures you can make a delicious Pulled Pork and at high temperatures you can quickly make a fresh pizza. The ceramic heat shield will darken over time, this is quite normal. Do not use cleaners such as abrasives and or detergent, this attracts into the heat shield. The heat shield is best cleaned by burning it clean.
