When cooking with indirect heat, place a heat deflector between your grill and your burning coals. The heat delfector will keep you from getting direct radiant heat from the coals onto your ingredient. The shield will also prevent oil or grease from flaming. When you cook indirectly you are using your Kamado more as an oven than a grill. However, the BBQ flavor will always be in your preparation because you are cooking in an enclosed BBQ. You can work indirectly at both high (e.g. pizza) and low temperatures (e.g. pulled pork).
