Marinades
Marinating your fish or meat makes all the difference because not only do you taste the flavours on the outside, but it's also soaked in. Marinating for a long time also makes the meat tender. The BBQ marinade completely soaks into the meat and creates a flavour sensation. The longer you let it marinate, the better the flavour soaks into the meat and the more tender it becomes. Of course, how long you let it marinate varies per product. You let a large piece of meat marinate longer than a piece of fish. This is due to texture of the meat, which means it takes longer to become tender and absorb all the flavours.
Then you might have the question: what marinades are there? chicken marinade BBQ, satay marinade BBQ, salmon marinade BBQ and so on. EldurApi has already compiled some tasty marinades for you. So you don't have to make difficult choices at home because they are already ready-made. We have the Fish Marinade, Meat Marinade and the Shellfish Marinade. So you don't need to add any more salt or oil to these.
EldurApi - Assortment
We have three different types of marinades in our range. EldurApi's marinades are a collaboration with barbecue expert Peter de Clercq. Peter is a Belgian chef who has grilling perfectly under control. Together, we have developed 3 different BBQ marinades one for fish, meat and seafood. The marinades are oil-based so you don't have to add them yourself. The marinades also contain a touch of pilipili to give a nice spicy flavour to your dish.
How long should meat be marinated?
Marinating depends on the dish you want to prepare. It depends on the size and type of product. During marinating, the acids in the marinade weaken the meat, making it increasingly tender. You also don't want it to marinate for too long because it can also lose its texture. We recommend marinating fish for between 1 hour and up to 2 hours. While for Meat Marinade, you let the red meat marinate overnight. For chicken marinating BBQ, we also use the Meat Marinade and we also leave this overnight. With shellfish, it is best to marinate it only briefly as you want it to still retain its texture, go for about 15 to 30 minutes for best results.
Why marinate in the fridge?
You leave it in the fridge while marinating so it stays fresh and you want to minimise the growth of bad bacteria. With fish and meat, it is important to keep it refrigerated. If you leave it out of the fridge for too long, the meat may go bad and this can make you very ill.
Using the marinade
1. Preparing
You start by preparing your fish or meat. Make sure its quality is good. If necessary, you can remove larger pieces of fat or clean your fish. You can then leave it as it is, or you can cut it into pieces. If it's smaller pieces, you won't have to marinate it as long.
2. Marinate
Next, add it to a large bowl, making sure you have room to spare. You need the space to mix it well. Coat the meat with about 100 grams per kilo. The marinade is already ready-made you don't need to add extra salt or oil. You add the marinade to taste. After marinating the meat, it is very important to keep it sealed.
3. Let it soak for a while in the fridge. The time varies depending on the product. If you like a strong flavour, leave it for a long time, and if you don't like that, use a little less of the marinade and leave it for a short time. The marinade times also differ per product. Meat is soaked longer than a piece of fish.
4. Grilling
When the meat has marinated long enough and all the flavours have soaked in, you can start grilling it on your Kamado. Heat your YAKINKU® Kamado, when it is at the right temperature, place the meat on the grill. Keep an eye on the meat using your favourite BBQ accessories!
5. Preparing a side dish
Meanwhile, you can start working on your side dish. Go for a dish that goes well with the BBQ meat or fish. Make sure the combination of different flavours enhance each other for the tastiest result.
6. Serve
When everything is ready, you can start serving it. Grab your side dish and the delicious marinated meat and surprise your guests with the delicious flavours. The marinade has now fully soaked into the meat and become tender. Every bite is another taste sensation!
