Wine cask chips are ideal for smoking fish, shellfish, pork, beef, lamb, chicken and cheese. You can use these wine cask chips either dry or wet. If you soak the shreds in water for 20 minutes, you get an even more intense flavour and aroma. Please note, however, that you will develop more smoke and the temperature in your Kamado will drop. You can also use these chips in a gas barbecue, in which case you should choose a smoker box.
