Chunks can be used wet or dry. When used dry, there will be no drop in temperature in your BBQ and the chunks will give off a light smoke flavour. When used dry, the chunks will give off an immediate smoke. If you choose to soak chunks first, the wood will give off a more intense smoke flavour. The temperature in your BBQ will drop and steam will develop first. Chunks are also suitable for use in a gas barbecue. When doing so, place the Chunks in a metal box.
