Chunks can be used either wet or dry. When used dry, there will be no drop in temperature in your BBQ and the chunks will give off a slight smoke flavor. When used dry, smoke will develop immediately. If you choose to soak chunks first, the wood will give off a more intense smoke flavor. The temperature in your BBQ will drop and steam will develop first. Chunks are also suitable for use in a gas barbecue. In doing so, place the Chunks in a metal box.
